Raw vegan maca fudge

You saw me use it as a naughty (but not so) Smoothie Bowl Topper on Easter Sunday and but it tastes just as delicious and indulgent solo.

For those of you who don’t eat any or a lot of very sweet food, this raw maca banana fudge is perfect! I often find when I eat chocolate it feels very heavy and I am incredibly affected by the madness of the sugar rush that follows.


This fudge relies on the natural sugars found in bananas and a little pure maple syrup to adjust to your personal taste.

RAW BANANA MACA FUDGE

INGREDIENTS

½ cup coconut oil (melted) 1 tablespoon almond butter 2 ripe bananas, chopped ¼ cup raw cacao powder 2 Tbsp pure maple syrup (+1 more to taste) 1 tsp vanilla extract 1 tsp Maca ¼ tsp cinnamon

Optional toppings: 1 tbsp cacao nibs, Crushed frozen raspberries

METHOD

Combine all the ingredients in a food processor and blend until smooth, pushing down the sides if necessary.

Line a flat container with greaseproof paper and pour in the mixture.

Spread and level the chocolate with a spatula and sprinkle the nibs and raspberries evenly across the top.

Place in the freezer to set (20-30mins)

I kept mine in the freezer to retain its rigid shape.

About 5 minutes before you want a piece remove the container from the freezer and slice!
