Vegan Burrito Bowl

When you start to focus on ditching the plastic you'll realise how much healthier and nutritious your food will be as a lot of processed food comes in a little plastic single-use blanket. Not only are you going to reduce your waste you'll be feeling energised and fabulous too...."how did you get that glow?" "I'm on the vegan plastic-free diet honey".


This colourful bowl plays on those zingy, smokey and spicy flavours of mexico and provides a good balance of carbs, healthy fats, protein and fibre leaving you full and satisfied for hours YUM. So, how do you make it? A lot of the ingredients listed I have picked up from the amazing Source Bulk Foods in Melbourne so a bit of pantry prep will help you out.


RECIPE

Serves 2


Ingredients:


Smokey Beans

1 can black beans

1 Tbsp vegan bbq sauce (in a bottle no plastic remember!)

2 Tbsp water

1/2 red pepper, chopped into small pieces

1/2 red onion, diced

1 tsp cumin

1 tsp garlic powder

1 tsp chili powder

1 tsp smoked paprika

salt and pepper


1/2 cup brown rice (+ I added a Tbsp of nutritional yeast)

1/2 can sweetcorn

1 sweet potato, cut into small chunks

1/2 avo mashed with a little lime juice and sea salt

1 tomato chopped into chunks.

Omega mixed seed sprinkle to serve


* All the fresh coriander at the time was in plastic but add coriander too if you find it


Method:


Preheat the oven to 180c and prep the sweet potato. Place on a baking tray with a little oil salt and pepper and leave to roast for 20-30mins.


Meanwhile cook the brown rice. Add 1.5 cups to a saucepan and bring to the boil. Add the rice, lower to a medium heat and allow to cook for around 30-40 mins. Once it's cooked stir through some 1 Tbsp nutritional yeast for some umami flavour.


While the rice is cooking and sweet potato is roasting prep the avo and tomato and leave in the fridge for serving.


Now for the beans. Heat a little oil in a frying pan and add the pepper and onion. Toss for 5 minutes before adding the rest of the ingredients. Stir and ensure the mixture is evenly coated in spices. Once warm and fragrant set aside.


When everything is good to go, serve it up as below with the tomato chunks, avo smash and crunchy seeds on top.
