Fig, peach and pistachio french toast - vegan + sf

It’s been a while since I had an extravagant french-toast style breakfast and what better day to indulge than a Friday.


Two chunky doorstep slices of homemade oat and linseed bread act as the perfect base for this recipe with an adaptable amalgamation of texture and flavour to go on top.

Treat someone special to this delightful breakfast and you’ll have them eating out of your hand for the rest of the day.


And the secret is, the cooking part is pretty much foolproof! It’s all about the quality of ingredients and a little creativity in the presentation.


RECIPE (Serves 1)

Ingredients:

2 x slices good quality wholemeal bread

Batter 1 tbsp chia seeds + ½ cup almond milk (mix and leave for 10mins covered in the fridge) ½ tsp cinnamon ½ tsp pure vanilla essence 1 tsp coconut oil

Toppings ½ peach sliced 1 fig quartered 5 pistachios shelled and roughly chopped 1 tbsp maple syrup


Method:

For the toasts, combine all the batter ingredients in a shallow dish and leave to activate for 10-20minutes in the fridge.

Once thickened (should be a gel like consistency) dip the slices of bread into the mix being sure both sides are thoroughly coated.

Heat a grill on a medium heat and grease the tray with the coconut oil. Finely slice the peach and rub with a little cinnamon. Place on the grill along with the bread and grill each bread slice for about 3-4 mins on each side or until they are golden brown, before flipping onto the next.

(Grill the peaches to eye, should be about 3 mins each side dependent on the thickness of the slices- should be soft in the centre)

Meanwhile chop and prepare your other fruit and nuts.

Once the bread is done serve topped with the warm spiced peaches, figs and nuts and pour over the maple syrup just before eating.
