Energy brekkie bowl

Breakfast breakfast breakfast… not only is it the most important meal of the day to get right it is THE BEST!! And think about it this way… who out of your friends would you say is the most vibrant, energetic and perhaps the healthiest? Are they a breakfast lover….?

Everyone needs a little fuel to get their mind working and body in motion, so make a breakfast so yummy you dream about it and can’t wait to jump out of bed and pick up a spoon.

This is the effect bowls like this have on me. I woke up unnecessarily early today and couldn’t wait to get into the kitchen and rustle this up. Mornings are my favourite time of day (sorry morning haters, we’re all different!) its when the day ahead has the most potential and it’s when i’m at my most productive/ focused.


This brekkie bowl is a combination of fruit (apples are my kryptonite), oats, crunchy cacao rawnola, yoghurt and creamy peanut butter: A bowl of healthy fats, fibre and protein ie. gradual energy releasing breakfast perfection.





RECIPE (serves 1)


INGREDIENTS:


½ cup gf oats soaked in ¼ cup almond milk 2 tsp baobab powder 3 Tbsp super-cacao rawnola (recipe in previous blog post) 1 tsp bee pollen ½ ripe banana ¼ apple Handful of frozen blueberries Unsweetened soya yoghurt 1 Tbsp 100% peanut butter 1 tsp organic honey/ vegan sweetener

METHOD:

In a bowl mix the oats, milk and baobab and allow to soak for 5mins.

Push the oats to the side and pour in the desired amount of yoghurt.

Prepare the fruit and add to the bowl along with the other toppings.

Finish with a drizzle of honey and a scoop of peanut butter. Divine!
